Paneer Akbari
Ingredients600gms cottage cheese (cut into finger sized pieces) For filling: 4tsp khoya 2tbsp cottage cheese (mashed) 2tsp cashew nuts (chopped) 1tsp pickle masala 4tsp tomato puree For batter: 3tbsp cornflour Salt, to taste Few drops yellow colour Water, as required Oil, to deep fry For gravy: 2 tsp oil 2 tsp ginger-garlic paste 2 ½ cups tomato puree Salt, to taste ½ tsp red chilli powder Pinch, white pepper powder 1 tsp kasoori methi 2 tsp garam masala 2 tsp butter 4 tsp creamMethod:1. For the filling, mix together all the ingredients. Stuff the filling between two cottage cheese fingers. Keep aside. 2. For the batter, mix all the ingredients and make a smooth batter. Dip the cottage cheese sandwich in the batter and deep fry in hot oil for 2-3 minutes. Remove from wok and drain the excess oil on kitchen towel. Keep aside For the gravy: 1. Heat oil in a pan. Sauté ginger-garlic paste for 1 minute. 2. Add tomato puree and cook until the mixture thickens. 3. Add all the spices and seasonings. Cook for 3-5 minutes. 4. Add butter and cream. Mix and remove from heat. 5. Arrange the fried cottage cheese sandwiches on a platter and pour gravy on it. 6. Serve hot. |
