Almond Soup

Ingredients

 

25-30 Almonds (Blanched and Peeled)
arrow2 TSP Butter
arrow2 Cups Milk
arrow1 Cup Vegetable Stock
arrow1/2 Onion
arrow1 TSP Cornflour
arrow1 TSP Cream
arrow1 TSP Coriander (Chopped)
arrowSalt, Ac to Taste
arrowBlack Pepper Powder


  

Method:

 

  1. Keep aside 5-6 almonds and blend the remaining into paste.
  2. Mix the almond paste with milk and let it cook for 5-7 mins.
  3. Melt butter in a pan and saute onions. Mix cornflour with water and add to the onions.
  4. Mix vegetable stock, salt, almond paste milk and onions and cook for 3-4 mins.
  5. Let it cool and then blend well.
  6. Boil the soup for 4-5 mins.

Garnish with coriander leaves and chopped almonds. Serve hot.
