Stuffed Baingan
Ingredients250gms brinjal 2tbsp amchoor 2tbsp coriander leaves 2 onions (grated) 1 tsp jeera 1 tsp turmeric powder 1 tsp tomato ketchup ½ tsp red chilli powder 1 tbsp dhania powder 3 tbsp oil Salt, to tasteMethod:1. Make two small cuts on each brinjal. 2. Heat oil in a pan and deep fry the brinjal. 3. Sauté the onions. Mix rest of the ingredients and stuff them in the cuts of fried baingan. 4. Now transfer them in a pan. Sprinkle a little water. Cover and let it cook until the baingan are soft and done. 5. Garnish with green coriander leaves and serve hot with naan or chapatti. |
