Polenta Concia

Ingredients

1 cup makki ka atta 1½ cup boiling water ¼ tsp soda bi carb 2 tsp oil Salt, to taste Black pepper powder, to taste 1 cheese cube (grated) For tomato topping: 2 tbsp olive oil 3 tomatoes (chopped) 2 onions (chopped) 1 tbsp ginger garlic paste ½ tsp black pepper powder ½ tsp oregano ½ tbsp basil  

Method:

1. Mix boiled water, salt, black pepper powder, oil and soda bi carb. 2. Mix makki ka atta with little water and mix it in the boiling water. Cook it until it starts to thicken. 3. For the tomato topping, heat oil in a pan and sauté onions and tomato for 2-3 minutes. Then add remaining ingredients and cook for 3-4 minutes. 4. Pour makki mixture in a greased baking dish. 5. Pour the tomato mixture over it. Spread the grated cheese over it and bake in a preheated oven for ½ hour. 6. Serve hot.
