Sesame and Patra Salads

Ingredients

6-8 patra leaves (arbi leaves) (washed and cleaned)

For filling:

1 cup gram flour

4 tsp lemon juice

½ tsp green chilli paste

½ tsp ginger paste

½ tsp turmeric paste

2 tsp sugar

Salt, to taste

For salad:

½ cup hung curd

½ cup vegetables (chopped) (carrot, capsicum, spring onion and cabbage)

½ tsp garlic paste

¼ tsp black pepper

1 tsp sugar

¼ tsp salt

Carrot, to garnish

1 tsp roasted sesame seeds, to garnish

  

Method:

1. Mix all the ingredients of filling and make a thick paste.

2. Take a patra leaf and spread the batter on it.

3. Place the second leaf on top of it and spread the batter.

4. Place the third leaf on it and spread batter.

5. Fold all the leaves into a tight roll and steam for 5-7 minutes.

6. When the leaves cool sufficiently, slice them.

7. Roll the slices in roasted sesame seeds.

8. Mix all ingredients of the salad and chill.

To serve:

Heat the patra rolls on a non stick pan for a minute.

When warm, garnish with carrot slice and serve with cold salad.
