Couscous Cups

Ingredients

6 tomatoes

1 red pepper (chopped)

1 yellow pepper (chopped)

2 tbsp avocado (chopped)

1 onion (chopped)

2 garlic cloves (chopped)

2 tbsp olive oil

1 cup couscous (soaked in water)

1 tsp white vinegar

Fresh Basil

Salt, to taste

Black pepper, to taste

  

Method:

1. Slice off the top of the tomato. Scoop out the pulp and sprinkle little salt in the shell.

2. Heat olive oil in a pan. Add garlic, vegetables and sauté. Add couscous, salt and black pepper and mix well.

3. Fill this mixture in the tomato cups and line them on a greased baking dish.

4. Bake them in a pre heated oven at 200 degree for 20 minutes.

5. Serve hot.
