Grilled Zucchini Roll

Ingredients

200gms Zucchini 2tsp oil 150gms ricotta cheese 20gms each red, yellow and green capsicum (thinly sliced) 10 basil leaves 1tsp chilli sauce Salt, to taste Black pepper powder, to taste Harissa sauce, to serve  

Method:

1. Peel and cut the zucchini in 3 inch long pieces. 2. Scoop out the pulp leaving a little at the bottom. 3. Sprinkle salt and black pepper powder and keep aside for 10 minutes. 4. Heat a pan and pour some oil. Grill the zucchini on it. 5. Heat a pan and add 1 tsp oil. Add ricotta cheese, red, yellow and green capsicum, basil leaves, salt and chilli sauce. Sauté for 2 minutes. 6. To serve, take a zucchini roll and fill it with the prepared mixture. 7. Sprinkle Harissa sauce and serve.
