Porridge Salad

Ingredients

1 cup porridge (boiled0

1 tomato

1 capsicum

1 tbsp mint leaves (chopped)

4 lettuce leaves

1 tbsp olive oil

1 tsp mustard seeds (powdered)

1 tsp lemon juice

Salt, to taste

Sugar, to taste

  

Method:

1. Mix olive oil, mustard powder, lemon juice, salt and sugar.

2. Mix together porridge, tomato and capsicum. Add the dressing and mix well.

3. Keep in the fridge and let it cool.

4. To serve, keep the lettuce leaves on the plate and keep the salad on it.

5. Garnish with mint leaves and serve cold.
