Creamy Spinach Soup
Ingredients2 tbsp butter 1 onion (chopped) 500gms spinach (chopped) 5 cups vegetable stock 50gms coconut cream Pinch, grated nutmeg 50gms cream Salt, to taste Freshly ground black pepper Parsley, to garnishMethod:1. Melt butter in a pan. Add chopped onion and sauté until soft. 2. Add chopped spinach. Cover the pan and let it cook for 10 minutes on low flame. 3. Put the spinach in a blender. Add some stock. Blend until smooth. 4. Return the mixture to the pan, Add the remaining stock and coconut cream. 5. Add salt, black pepper powder and nutmeg. 6. Simmer for 15 minutes to thicken it. 7. Add cream to the soup. Stir well and heat it. Do not boil, 8. Garnish with parsley and serve hot. |
